Every dish is an encounter with flame. Our kitchens are centered on the Aatish - the sacred fire that blisters the grain, seals the marrow, and breathes life into the spices of Defence Colony.

Direct sear, white-hot clay tandoor.
Dum
Quiet exhale of steam beneath a flour seal.
Mithas
Caramelized wood-smoke and saffron milk.
Sealed in wax.
Opened with intent.
Hand-wrapped in parchment. Secured with a wax seal stamped Zāoq. Inside, the day's fire portioned for your table, with a couplet card resting on top.
Nothing inside the box has been hurried.
Pull up. Roll down.

This is exactly what it sounds like. You park. We come to the car. Food arrives the way it leaves our kitchen - hot, considered, on real plates if you would like them, in the road version if you would not.
For the Delhi evening you do not feel like dressing for. For the lunch between meetings. For the after-dinner kulfi you want, badly, on the way home.
Pull into a bay outside Zāoq. Flash your headlights, or tap the bell at the window. We bring the menu, take the order, return with the food.
